Cargill announced on June 1 that it will begin customer testing a high-stability canola oil with only 4 to 4.5 percent saturated fat in early 2010. This is nearly a 43-percent reduction in saturated fat from commodity canola oil. Cargill's Clear Valley® low saturate canola oil may allow food makers to differentiate their brands with low, reduced or no saturated fat claims on product labels. Commercial release of the higher monounsaturated fat canola oil is anticipated by 2013.
