Simple, back-to-basics dishes are a 2010 foodie trend, according to a new survey by the National Restaurant Association and American Culinary Federation. Enter gourmet fried chicken on fancy menus. Both Thomas Keller of Ad Hoc restaurant in Yountville, Calif., and Nick Hodge of Kitchenette in Montreal, Q.C., recommend frying in canola oil for great results.
