The Culinary Institute of America Recipes and Videos Show Off Healthy, Versatile Oil


CHICAGO, IL – CIAProChef.com, The Culinary Institute of America’s (CIA’s) web site for professional chefs and food service providers, presents “The Professional Chef Discovers Canola Oil” – a free online learning module about canola oil’s health and culinary advantages. Recipes and videos by chefs at the CIA at Greystone show delicious ways of using the oil.

Due to its low saturated fat and zero trans fat content, canola oil has the potential to improve the American diet. An October, 2007, modeling study in the Journal of the American Dietetic Association showed that if canola oil replaced common fats in the U.S. diet, it would decrease Americans’ intake of saturated fat and increase their consumption of healthy monounsaturated and omega-3 fats. Canola oil is also a good source of vitamin E.

These properties allow canola oil to add “stealth health” to any recipe by replacing less desirable fats. Both health-conscious and indulgent chefs get this benefit along with versatility and a high smoke point with canola oil. It can be used in just about any culinary application requiring oil.

Geared towards professional chefs but suitable for home cooks as well, the canola oil e-learning module features 16 downloadable recipes of moderate complexity. CIA chef-instructors demonstrate how to prepare each of these recipes in streaming videos.
