Why Food & Bodies Need Fats

Eating a salad without dressing means missing out on both flavour and the health benefits of good fats. Elizabeth Shaw, MS, RDN, CLT, suggests expanding the perception of “healthy” foods on SHAPE, noting that fat is needed to absorb fat-soluble vitamins, like vitamins A, D, E and K.

Registered dietitian Manuel Villacorta echoes this sentiment, “adding oil in your recipes is crucial to get the nutrition you need from your food. I use canola oil because it has the least saturated fat of all common cooking oils, half that of olive oil, plus it has the most omega-3 fat and is a good source of vitamin E.”
