Canola Oil in Foodservice News

Healthier oils are a major trend in foodservice, as reported in QSR. In all cooking, operators should focus on using “good, healthy oils” low in saturated fats, says Jessica Crandall, a registered dietitian at Sodexo and spokesperson for the Academy of Nutrition and Dietetics. One of the most popular oils is canola oil, which has just seven percent saturated fats. The article also recommends high-oleic canola oil if more durability is needed.

Zach Hovan, corporate chef at Bunge, debunks common misconceptions about cooking oils in a Q&A on QSR. Hovan states that canola oil is best for general cooking, including sautéing and cold prep. Canola oil is touted as a heat-stable, high-performance oil.
