Comfort Food Lightened Up

"Summer comfort food" – lighter, fresher dishes still capable of satiating – is a term that’s been popping up on food blogs and columns, reported Cox Newspapers. Authors of the cookbook "Cooking Light Comfort Food" reduced amounts of salt and butter in classic recipes and, like in its Potato Salad 101 recipe, used low-fat mayonnaise and canola oil to lighten the saturated fat and texture.
