Eating Healthy on a Diet

Registered dietitian Manuel Villacorta, author of “Whole Body Reboot,” refutes in The Morning Call the notion that it is difficult to eat healthfully on a budget. “There are plenty of healthy foods that are nutrient-rich and are only pennies per serving,” he says, for example bananas, canola oil and carrots. Villacorta notes that canola oil has the least saturated fat and more omega-3 fat than most common cooking oils, including olive, and is a good source of vitamin E.
