Newly minted Food Network host and cookbook author Valerie Bertinelli cooks up her recipe for Chicken Cutlets with Spicy Arugula in canola oil on NBC’s “Today” show.  She told Matt Lauer she prefers canola oil for cooking, as in this easy-to-make dish.
